Is this for a pet shop or a grooming business?

A service business — groomers, dog walkers, boarding and kennels, day care, mobile grooming. The customer is the pet owner and the pet is what gets booked in. It's not a retail catalogue system.

Can one owner have several pets?

Yes. Pets belong to the owner, each with their own breed, weight, photo and handling notes, and each gets booked separately.

Do I get a crew map like the field trades?

Not by default, because a grooming salon doesn't need one — your account only switches on what your trade uses. If you run mobile grooming and want it, it can be turned on.
